The rainy season is almost here and every Filipino household will have their own version of this favorite stew/soup to ward of the rainy blues. My babe has been in the hospital since Tuesday and had surgery, poor baby wanted the comfort of a good Sinigang, so I obliged. This can also be made with beef and different kinds of fish instead of pork, and vegetables added depend on what might be in season. We Pinoy's love our sour soup.
RECIPE

- 1/2 Kl Pork Belly (Liempo) or Pork Ribs, cut into 2 inch peices
- 2 Red Onions quartered
- 3 Tomatoes quartered
- 2 Finger Chili
- Tamarind Soup base (I don't have time to make actual Tamarind paste)
- Seasonal Vegetables. For this recipe I used Snake Beans, Water Spinach (Kangkong), Radish, and Bok Choy
- Optional Vegetables: Eggplant, Okra, Wing Peas, Taro
- Cracked Pepper
- Fish Sauce (Patis) to taste
- Saute 1 of the quartered onions with 1 of the quartered tomatoes. Add Pork pieces.
- Add cracked pepper and Patis, saute for 1 min. Add Water to cover the meat.
- Use a pressure cooker and cook for 20min
- Once pork is tender, add Tamarind soup base, Snake Beans, and Radish. Simmer for 2-3 min.
- Add Water Spinach and Bok Choy then turn of the heat. Wait for 2 min then Serve and Enjoy!
