Home Cookin' | Beef Tomato Curry

Being a busybody I only actually get to cook during Sunday - everyone is at home and it's the weekend. That is as good a reason as any to splurge a little and hone my cooking skills.

I don't normally cook with beef because you have to cook it longer to make it tender but I had to make an exception with this recipe. My partner loves Curry, and he would either cook Chicken Curry (he likes to cook too) or order that dish when we dine out. I thought of mixing it up a little bit and found this recipe - it definitely hit the spot.

RECIPE
=============================================================

    Beef Tomato Curry
  • 2 1/2 Tbsp garlic, crushed
  • 2 1/2 Tbsp patis
  • 1 1/2 kg beef, shortribs, cut into 2-inch x 2-inch cubes
  • 2 1/2 Tbsp oil
  • 3 Tbsp ginger, sliced into strips
  • 2 pc siling labuyo, sliced diagonally
  • 1 1/2 pc siling haba, sliced diagonally
  • 2 pack Del Monte Quick 'n Easy Curry Mix (40g) / Curry Powder
  • 1 pouch DEL MONTE Original Style Tomato Sauce (200g)
  • 1 1/2 cup water
  • 2 pack DEL MONTE Quick 'n Easy Gata Mix (40g), dissolved in 3/4 cup water or 2 cups of Kakang Gata (Coconut Milk)
  • 1/2 cup bell pepper, cut into 1-inch cubes
  • 2 cup potato, cut into 1-inch chunks

  • Combine garlic, patis, and beef. Marinate for 30 minutes in the refrigerator. Drain the meat and separate garlic.

  • Sauté ginger, reserved garlic, siling labuyo, and siling haba. Add DEL MONTE Quick 'n Easy Curry Mix then sauté for 1 minute. Add back the meat, saute until a little brown, then add DEL MONTE Original Style Tomato Sauce and water. Bring to a boil then simmer covered for 3 hours (if you don't have a lot of time like me, you can use a pressure cooker for 45min)

  • When the meat is tender, add the dissolved DEL MONTE Quick 'n Easy Gata Mix then  Add potatoes. Simmer for 5 minutes. Add bell pepper. Serve.

NOTE: I ran out of Chicken Masala (need to buy from our neighborhood Indian Store) so I'm using the pre-mixed Curry mix. You can also use regular Curry powder. Kakang Gata or Coconut Milk (from an actual coconut) can also be used instead of the powdered version. I also used Cayenne Pepper o add more heat to the chopped Sili (Chili).
