So today I decided to do a little spring cleaning because my babe couldn't find this PS3 game he wants to swap out. Knowing my packing style, from the last time we moved houses in March, I had no idea where I put the blasted game. I have a slew of boxes I have no decent storage for, other stuff I won't throw away(and are still lying around), and I have yet to get a wardrobe for the clothes stuck in plastic storage containers. I remember telling myself I will not become a pack rat like my mother but it looks like there is a little bit of her in me. I just need to talk myself into throwing stuff away and not buying anymore (suuuuuurrrreee.......#eyeroll).
Anyway, moving on. Haha. I was too tired sifting through random stuff that I decided to just put something simple together for lunch. Good thing I saw fresh veggies at our neighborhood Talipapa (small wet market) and Tuyo (dried fish) and we were good. Just a little saute and we have ourselves a hearty and healthy meal.
RECIPE

Sauteed Bok Choy and Dried Fish
- 3-4 heads of Pechay (Bok Choy)
- 2 medium size tomatoes, diced
- 1 large Red Onion, diced
- 2 cloves garlic, crushed and diced
- 2 tbsp oil
- 2 cups stock (vegetable or pork)
- chop all the Pechay in small 1/2 inch pieces
- In Pan, saute onions, garlic, and tomatoes
- Add chopped Pechay and saute for 2 min
- Add Stock, bring to boil.
- in a separate pan, on low heat fry Tuyo (dried fish) about half a minute to a minute on each side. Serve.
