Home Cookin' | Stovetop Mac & Cheese (Mother's Day Special)


So Sunday Lunch is becoming a thing with my family. I like having to wrack my brain for 6 days and then decide what to cook on a Saturday. And since today is also Mother's Day, I decided to make what a lot of moms have made for their family on laid back days. It's no coincidence that my babe has been carving this for a few weeks now too.


RECIPE

      Stovetop Mac & Cheese
  • 1 kl Elbow Macaroni (Or any Pasta Shape)
  • 4 tablespoons butter
  • 3 tablespoons All Purpose Flour
  • 2 tablespoons Garlic Powder (adjust to taste)
  • Salt
  • Pepper
  • 2-3 Cups Milk
  • Cheese (I used Regular Cheddar and a little bit of Pimiento Cheese Spread)
  • Optional: Peas, Mushroom, ham, Bacon, Brocolli, Cauliflower (I used just peas for this dish)



Instructions


  • In a large pot, cook pasta according to package directions. Drain and set Aside.
  • In a small bowl, mix together flour, garlic powder, salt and pepper
  • In the same pot, melt butter over medium heat and then whisk in the flour mixture, a little at a time, continuously whisking until the mixture  is thick and starts to turn light brown. Slowly whisk in milk until mixture starts to thicken.
  •  Turn heat to low and add the cheeses, whisking until melted. If the Sauce is a little too thick add more milk or water. If the sauce is too thin, add more cheese until desired consistency. Add peas, simmer 1-2 min.
  • Stir in cooked pasta until thoroughly coated. Serve and Enjoy!

PS. Time Check 8pm - I transformed some left over creamy mac & cheese into creamy chicken soup (minus the chicken). Just added more water (or milk), pepper, roughly chopped carrots and cabbage. Dinner is is delish (and maybe breakfast for tomorrow too).
